中文摘要干琥珀在和菓子中分類上屬於干菓子,其糖質外殼具有表面不沾黏的優點且與軟質餡心構成複合口感。傳統作法使用砂糖、洋菜及水烹煮後乾燥製成。本研究利用低溫冷風乾燥機大幅縮短乾燥時間,在50 °C下只需24小時即可製成品。乾燥過程中發生表面硬化現象(case hardening),使糖果表面具有脆殼,形成外層硬脆的口感,並保留內部水分不易蒸散,形成柔軟濕潤的口感。配方中砂糖含量越高,製成品外殼糖層越厚。洋菜膠具有提供支持結構的功能,不同濃度的膠體可以提供不同口感的餡心,但膠體低於總重0.93%將無法成型凝固。製成品水活性介於0.5~0.6之間,屬半濕性食品,不易受黴菌汙染。室溫下儲藏性試驗不密
